  • 2.5 lbs ribs
  • Salt and pepper
  • Olive oil
  • Fresh ginger
  • Fresh garlic
  • Chili flakes
  • Szechuan pepper
  • Star anise
  • 1/3 cup honey
  • 1/3 cup soy sauce
  • 5 tablespoons vinegar
  • 1/3 cup rice wine
  • Onion chives
  • 400ml chicken stock

  1. Rub salt and pepper on both sides of 2.5lbs ribs.
  2. Heat olive oil in a pan.
  3. Add ribs and sear until heated through.
  4. Caramelize both sides of the ribs.
  5. Slice ginger and garlic thinly.
  6. Place garlic and ginger atop ribs; add chili flakes, Szechuan pepper, star anise, 1/3 cup honey, 1/3 cup soy sauce, 5 tbsp vinegar, 1/3 cup rice wine; boil and taste.
  7. Stir in onion chives.
  8. Pour in 400ml chicken stock.
  9. Bake at 180°C for 30 mins, turn and bake another 30 mins.
  10. Return to stove to further glaze.
