Ingredients
- 2.5 lbs ribs
- Salt and pepper
- Olive oil
- Fresh ginger
- Fresh garlic
- Chili flakes
- Szechuan pepper
- Star anise
- 1/3 cup honey
- 1/3 cup soy sauce
- 5 tablespoons vinegar
- 1/3 cup rice wine
- Onion chives
- 400ml chicken stock

- Rub salt and pepper on both sides of 2.5lbs ribs.
- Heat olive oil in a pan.
- Add ribs and sear until heated through.
- Caramelize both sides of the ribs.
- Slice ginger and garlic thinly.
- Place garlic and ginger atop ribs; add chili flakes, Szechuan pepper, star anise, 1/3 cup honey, 1/3 cup soy sauce, 5 tbsp vinegar, 1/3 cup rice wine; boil and taste.
- Stir in onion chives.
- Pour in 400ml chicken stock.
- Bake at 180°C for 30 mins, turn and bake another 30 mins.
- Return to stove to further glaze.
