Dough

  • 600 ml warm milk
  • 700 g all-purpose flour
  • 1 tsp instant yeast
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 3 tbsp olive oil or vegetable oil

Filling

  • 500 g lamb ground meat
  • 2 onions
  • 2 tomatoes
  • 1 small bell pepper
  • 1 chili (optional)
  • 1/3 cup parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp "7 spice" or "all spice"
  • 1 tsp paprika
  • Optional: pomegranate molasses

7 Spice Blend

  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp black pepper
  • 1 tsp ground cardamom
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg

Guide

  1. Mix warm milk, sugar, and yeast in a bowl. Add salt and vegetable oil.
  2. Stir in flour and baking powder; mix without kneading for 1 minute.
  3. Knead for 7-10 minutes until smooth. Let rise for 1-2 hours.
  4. Blend onions, tomatoes, and bell pepper. Mix with lamb meat and spices.
  5. Strain excess liquid from the filling.
  6. Roll dough 0.5 cm thick, add filling, and seal.
  7. Brush with egg yolk and milk mixture for a golden color.
  8. Place on baking tray. Bake at 180°C (365°F) for 10-12 mins.
  9. Serve with fresh yogurt and lemon squeeze.
