Creamy Pink Pasta

Creamy pink pasta is a dish that blends elements of Italian and American cuisine and is enjoyed in various parts of the world, particularly where Italian cuisine is popular. It has become a favorite in homes and restaurants alike due to its creamy texture, vibrant color, and flavorful sauce.
Ingredients
Boiling pasta
- 1½ litres water
- 1 tsp salt
- 2 tsp olive oil
- 2 cups penne pasta
White pasta sauce
- 1 tsp butter
- 2 tsp olive oil
- 2 tbsp all-purpose flour (maida)
- 1½ cups chilled milk
- ¼ tsp mixed herbs
- ¼ tsp chilli flakes
- ¼ tsp salt
- 3 tbsp grated cheese
Red pasta sauce
- 3 tsp olive oil
- 1 tsp butter
- 3 cloves garlic, finely chopped
- ½ tsp mixed herbs
- ½ tsp chilli flakes
- 1 onion, finely chopped
- 1½ cups tomato puree
- 2 tbsp tomato sauce
- ½ tsp chilli powder
- ½ tsp salt
Other ingredients:
- 3 tbsp grated cheese
- ¼ tsp chilli flakes
- ¼ tsp mixed herbs
Guide
Boiling the Pasta
- Bring a large pot of water to a boil.
- Add 1 tsp salt and 2 tsp olive oil to the boiling water.
- Stir in 2 cups of penne pasta and cook for about 9 minutes until al dente.
- Drain the pasta and set aside.
Making White Pasta Sauce
- In a pan, heat 1 tsp butter and 2 tsp olive oil.
- Add 2 tbsp all-purpose flour (maida) and roast until aromatic.
- Gradually pour in 1½ cups of chilled milk while stirring continuously to prevent lumps.
- Once the sauce thickens slightly, add ¼ tsp mixed herbs, ¼ tsp chilli flakes, ¼ tsp salt, and 3 tbsp grated cheese.
- Stir well until the cheese melts and the sauce is smooth. Avoid overcooking to prevent thickening.
Making Red Pasta Sauce
- Heat 3 tsp olive oil and 1 tsp butter in a large wok.
- Add 3 cloves of finely chopped garlic, ½ tsp mixed herbs, and ½ tsp chilli flakes. Sauté until fragrant.
- Add chopped onion and cook until translucent.
- Pour in 1½ cups tomato puree and cook until slightly thickened.
- Stir in 2 tbsp tomato sauce, ½ tsp chilli powder, and ½ tsp salt. Cook until the sauce thickens.
Making Pink Sauce for Pasta
- Combine the prepared white sauce with the red sauce in a pan. Adjust the amount of white sauce to achieve the desired creaminess.
- The mixture will turn into a pink sauce.
Assembling the Pasta
- Add the boiled pasta to the pink sauce and mix well.
- Sprinkle 3 tbsp grated cheese, ¼ tsp chilli flakes, and ¼ tsp mixed herbs. Stir to combine.
- Serve the creamy pink pasta hot, garnished with more cheese if desired.
