Cinnamon Rolls

Ingredients
Ingredients for Overnight Cinnamon Rolls:
- 1 cup warm milk (110-115˚F), not hot
- 2 1/4 tsp instant yeast (rapid rise)
- 1 large egg, room temperature
- 2 Tbsp unsalted butter, melted, divided
- 4 Tbsp granulated sugar
- 1/2 tsp salt
- 3 cups all-purpose flour, plus 2 to 4 Tbsp (and more for dusting)
For the Cinnamon Roll Filling:
- 6 Tbsp unsalted butter, softened, plus more for greasing the pan
- 1/4 cup granulated sugar
- 2 Tbsp ground cinnamon
For the Cream Cheese Icing:
- 4 Tbsp unsalted butter, softened
- 4 oz cream cheese, softened
- 1/2 Tbsp vanilla extract
- 1 cup powdered sugar

Make the Dough
- In a large mixing bowl, or using a stand mixer, combine one cup of warm milk (110-115˚F) with 2 1/4 teaspoons of instant yeast.
- Add one large egg (room temperature), four tablespoons of sugar, one tablespoon of melted butter, and half a teaspoon of salt. Whisk to combine.
- Add three cups of all-purpose flour and stir with a spatula or wooden spoon until the dough forms.
- Add more flour gradually until the dough is slightly sticky but no longer sticking to your fingertips.
- Knead the dough by hand for about three minutes until it's smooth and elastic.
- Cover with plastic wrap and let rise in a warm oven (about 100°F) for 30 minutes or at room temperature for an hour, until doubled in size.
- Dust a clean work surface with flour, turn out the dough, and roll it into a 17 by 10 inch rectangle.
Roll the Dough
- Dot the dough with six tablespoons of softened butter and spread it evenly to the edges.
- Combine 1/4 cup granulated sugar with two tablespoons of ground cinnamon, then sprinkle the mixture over the buttered surface.
- Roll up the dough starting from a longer side, keeping it tight and even.
- Slice the rolled dough into 12 equal pieces.
Bake the Rolls
- Butter a 9x13 casserole dish and arrange the cinnamon rolls in it with the cut side up.
- Cover with plastic wrap and let rise in a warm 100°F oven for 20-30 minutes, or at room temperature for 50-60 minutes.
- Brush the top with melted butter and bake at 350°F for 22-24 minutes until lightly golden.
- Let the rolls cool in the pan for 15 minutes.
Make the Cream Cheese Icing
- Beat four tablespoons of softened butter and four ounces of cream cheese until smooth.
- Beat in half a tablespoon of vanilla extract.
- Add one cup of powdered sugar and continue mixing for 3-4 minutes until fluffy.
